Sun Dried Tomato Penne Primavera

Number of servings: 4
1- 16oz. can diced tomatoes,celery,peppers,onions
1- medium tomato
1- large yellow onion
1- small green pepper
1- Tablespoon chopped jarred garlic
10-12 peices of jarred sun dried tomatos
4 Tablespoons olive oil from jar of sun dried tomatos
1- box Dream Fields whole wheat penne pasta
Put salted water on to boil for the pasta.
Then in a medium non stick frying pan heat 2 T. olive oil from the jar of sundried tomatos and chopped garlic, cook on medium heat.
Dice the tomato, green pepper, and onion and add to the pan along with the can of diced tomatoes and saute about 8 minutes while pasta cooks. Then add coarsely chopped pieces of sun dried tomatoes and the second 2 tablespoons of olive oil from the jar and cook an additional 4-5 minutes serve tossed with Dream Fields whole wheat penne pasta.
You can use more or less oil depending on your personal taste. I created this recipe because I live alone and try to maintain a healthy life style and also like to make things that I can eat several days that reheat well or can be eaten cold. This fits all those categories and has pleased even my pickiest guests!! Whether I serve it fresh off the stove, reheated for a lunch guest, or as a refreshing pasta salad everyone loves it :-)
